The following is a rough estimate of how I might make chili on a given day

Gather up the stuff:

  • 1 ½ lbs good quality ground beef
  • 1 ½ lbs good quality pork sausage
  • 2 green bell peppers
  • 1 yellow bell pepper
  • 1 large jalapeno pepper
  • 1 large yellow onion
  • 4 celery ribs
  • 1 large garlic bulb
  • 1 TBSP Cracked black pepper
  • 2 TBSP Salt
  • 3 TBSP Cumin
  • 3 TBSP Chili powder
  • 6 bay leaves
  • TBSP dried or fresh basil
  • 30 oz can diced tomatoes
  • 46 oz can tomato juice (might not need it all. See how it looks)
  • 15 oz can black beans
  • 15 oz can garbanzo beans (Chickpeas are the same thing)
  • 12 oz bottle ice cold beer
  • Optionally; sour cream, fresh cilantro, and shredded cheddar for toppings

Directions:*

Crack that beer and take a pull. You’re about to embark on a cathartic journey that will feed your soul as well as your body. 

Get out your biggest pot. You’re making a lot of chili today Samuel. I know you have a big cutting board.Get that out too. You’ve got some chopping to do. (If you want to use that food processor go ahead, but leave some of the vegetables out so you have some chunks for texture and aesthetics.- you wanna look good on Instagram, right?)

Heat the pot to medium high and drop in the meats and chopped vegetables,leaving out the yellow pepper and one green bell pepper. Add those later with the liquids. I love this part. Brown the meat and season it with everything but the bay leaves and basil. Once fully cooked, drain. Don’t put that down the sink! Pour the grease into a discarded can or jar and stick it under the sink like Grandma Rose did. You can throw it away once it solidifies. Don’t cook with it like your great grandma did. That’s gross and it’s not the great depression!

So now you have the base. Take a big bite and wash it down with that cold beer. Life is good. Does it taste like chili? If not, add more cumin!  Now add the remaining ingredients, bring to a boil- stirring and drinking beer. Cover, turn the burner to low, and simmer for a few hours. Grab two beers and head to the backyard where I’m waiting with cigars. 

  • Addendum :  Vincent recommends charring the vegetables in cast iron.  Yep!
