Company Story: A HOT Culinary Experience for every Palate
We are a Farm to Bottle / Jar company that grows our own peppers with high quality farming practices. We produce small batch boutique products for your enjoyment.
The pepper that got this company going: the Aji Lemon Yellow Hot Pepper is a Peruvian hot pepper that gives an exquisite citrus flavor to foods. The flavor is first and then the heat comes on.
We are introducing you to the culinary experience of this special pepper, just for starters. Unlike ‘super hots’ this pepper lets you balance the lemon citrus flavor to the heat. This is what we do with the Cat’s Meow Hot Sauce, the Peach Mango as well as the Blaz’n Peach Mango jams and the Strawberry Rhubarb (no sugar added) pepper jam.
For the more adventurous, We do have specialty ‘super hots’ like the Chocolate Habanero, Scorpion, Ghost and Our own cross pollinated variety, the small but flaming ‘Blaz’n Jelly Bean’.
Every jam, hot sauce or rub is designed with the intent of flavor first. Tom takes the time to study the flavor profile and pairing chemistry of every ingredient. Each product is then tested with individuals of varying palates to ensure that the final flavor to heat profile will ensure a true culinary experience.

Hot Sauce! My German rooted tongue doesn’t handle the hot stuff too well so I lean more towards sweet than heat. Even the lowest on the Scoville Scale can be a challenge to me!
